In honor of people continually asking me what I can eat, here are things that I can eat. Mediocre photos of everything included.

White Bean Pumpkin Turkey Chili by Skinnytaste.
I understand that chili being pumpkin-based and not tomato-based is a "hear me out" situation, but hear me out!! Pumpkins are just squash! If you do not put PUMPKIN SPICE in there it does not taste like a pie!
Chicken Taco Bowls by Budget Bytes.
I added mashed avocado from Costco. I'm not out here blending my own avocados.
Stovetop
Chicken Corn Chowder by Skinnytaste.
I 100% forgot to add the cream for the first serving that I ate because I was so hungry/excited. It was still good.
Bibimbap from Budget Bytes.
The recipe does not pretend to be authentic. It's still very good! I spent days perfecting my runny hard boiled egg in the toaster oven because following their instructions caused my eggs to explode.
Oven
Keilbasa Veggie Sheet Pan Dinner by Skinnytaste.
I hate that I constantly have to disclaimer Skinnytaste recipes like "I ignore her portion sizes! I am not low-carb, I just physically cannot eat bread!" but they taste GOOD and are actually easy.
No-cook
Tuna and White Bean Salad by Skinnytaste
I swear I eat things that aren't from Skinnytaste. Just not recently, I guess. The last serving of this is also good in a wrap if its not enough for a salad.

Cocoa Pebbles Treats by Dash For Dinner
Rice Krispies (brand name, some store brands are gluten free) aren't gluten free, but Cocoa Pebbles are!
I've done Fruity Pebbles now as well and think they are the superior choice.
The Softest Gluten Free Cinnamon Rolls by The Loopy Whisk.
Recipes tend to exaggerate in their titles, but this is legitimately one of the best cinnamon rolls I have ever had. My husband eats gluten and thought they were perfect. This is a life-changing recipe and I am going to be insufferable towards gluten free bakeries for the rest of my life now that I know I can make these.
Having said that, the psyllium husk fiber gel was horrifying and I did not have faith in this working.
Recipe modifications I made: I used potato starch (a listed option), and King Arthur 1:1 flour as the other flour option. I did not add xanthan gum because that flour already contains it.
