The Loopy Whisk
The Loopy Whisk is a baking website run by Katarina Cermelj that focuses primarly on gluten free baking, but caters to other dietary restrictions and allergies as well. She has a background in chemistry and has applied her STEM degree to making sure I can eat cinnamon rolls. These cinnamon rolls are what got me here. I bought a copy of her recipe book from ThriftBooks and am now dedicated to baking my way through it.
I'm linking recipes from her website when they exist in both places, but I wont be posting recipes that don't already exist online.

I don't even usually like lemon cake, but this cake is delicious.
I used King Arthur 1:1 flour instead of a blend that was recommended in the beginning of the book just to see what would happen. It worked great! I omitted the xanthan gum since the blend already has it. I also didn't sift any of the flour because I was panicking and trying to make this before work. Next time I will sift the flour because I do think I got some almond flour clumps.
I also needed to use prepackaged lemon juice in addition to my fresh lemon zest because the $1 bag of lemons I got from the produce store nearby did me a little dirty. But hey, I tried to squeeze fresh lemons. I don't think it detracted from the cake at all.
Verdict: 10/10 would bake again.
